Roasted vegetable soup - Paul's receipe

Ingredients

3 Celery sticks

8 Tomatoes

2 Medium red peppers

2 Red onions

1 Carrot

Half a pint oat milk

One pint (or as needed) vegetable stock and water

Salt, pepper

Olive oil

Method

Roast the vegetables together in olive oil, salt and pepper for 45 minutes.

Combine with the oat milk and water and heat.

Blitz to the required consistency.
