Makes 2-3 scones
112g self raising flour
Half teaspoon baking powder
23g cold butter - chunked
60g Cheddar - grated
Salt - pinch
Cayenne pepper - pinch
50ml milk
Place a tray in the oven on gas mark 6.
Mix the flour, salt and pepper and sift into a bowl.
Add the butter and combine with fingertips to a breadcrumb texture.
Add 50g cheese and rub in to distribute. Don't overmix to avoid melting the butter.
Make a well and add some milk to make a soft but firm dough. Add the milk gradually to the desired consistency.
Lightly flour a surface and roll or pat the dough to 2cm thick.
Cut out scones about 8cm in diameter.
Place the scones on baking paper and glaze with milk. Add the remaining cheese to the top of the scones.
Bake for 15 to 20 minutes.
