375g plain flour
1 tsp bicarbonate of soda
3 tsps ground ginger
120g unsalted butter
175g light brown sugar
5 tbsps golden syrup
1 medium egg
Pre-heat the oven to 180c for or gas mark 4.
Line 3 or 4 baking trays with parchment paper.
Add flour, bicarb and ginger and add butter.
Rub together until it resembles breadcrumbs.
Mix sugar into mixture and combine, then add syrup and egg until smooth.
Knead biscuit dough, then roll out onto floured work surface.
Roll out to half centimetre thickness and cut out.
Pop onto lined backing trays and bake for 10 to 11 minutes.
Cool fully then decorate.
